Cheddar Chive Bread


I absolutely love chives and they pair very well with cheeses. I used cheddar for this bread but Gruyere or baby swiss could be used.




Chop one bunch of fresh chives. I chopped mine a little longer than I usually do. 




Dice 2 to 3 ounces of extra sharp cheddar.




Shred a generous cup of the cheddar.




Set aside the chives and cheese.




In a medium mixing bowl combine 1 3/4 c. flour, 1 tbsp. baking powder, 1 tsp. salt.





Beat 3 large eggs until they become bubbly on the top.
Then add 1/3 c. whole milk and 1/3 c. olive oil



Combine with flour mixture.




Mix in cubed and shredded cheese and the chives





Just until everything is moistened. Do not overmix.




Place in a greased bread loaf pan. I added some extra shredded cheese on top right before I baked it. I would recommend it!




Bake 35-40 minutes at 350.




Serve warm with butter:)

Cheddar Chive Bread

1 3/4 c. All Purpose flour
1 tbsp baking powder
1 teaspoon salt
3 eggs
1/3 c. whole milk
1/3 c. olive oil
1 cup shredded cheese
2 ounces cubed cheese
1 bunch of fresh chives

Chop chive, shred cheese, and cube cheese. Set aside. Combine flour, baking powder, and salt. In a separate bowl beat eggs until foamy, then add milk and oil. Add egg mixture to flour. Mix in cheeses and chives until just moistened. Place in a greased bread loaf pan and bake at 350 for 35-40 minutes.

Honey Whole Wheat


I found a new recipe for my whole wheat sandwich bread that is very tasty. It contains a couple different additions which seem to work well together. I know it sounds weird, but orange juice is one of those ingredients. Skeptical? Make it and taste some of this bread for yourself!




Activate 2 1/2 teaspoons yeast with 1/2 cup warm water and a pinch of sugar. Cover bowl and set aside for 15 minutes until foamy or bubbly.




I squeezed 1/2 orange juice but buying orange juice works just as well (and is what I would have used if I had it on hand).




Dissolve 1 1/2 tsp. salt, 3 TBSP sugar, and 1/2 c. orange juice together in a medium bowl.




Pour in 5 TBSP melted butter.




Add 1 c. lukewarm milk.




Next, Add 3/4 c. instant mashed potato flakes. 




Knead dough for around 10 or so minutes. It's much more dense than white bread dough and will be sticky but still remain intact. 







Roll into a ball and place in an lightly oiled bowl. Cover with a cloth (I also put a plate over to seal the bowl) and place in a warm place to rise for 90 minutes.




Next, form into a loaft, place in a greased loaf pan.




  

Cover with plastic wrap and let rise another 75 minutes.




Bake at 350 degrees for 10 minutes. Cover loosely with aluminum foil and bake another 35-40 minutes.




It's called HONEY Whole Wheat. This is where the honey come in to play...the crust in sweetened with honey. Just pour over the bread after you remove it from the oven. Be careful, though, because it will drip.




TA DA!







Let it cool completely.




Serve or wrap it up for tomorrow's sandwiches!!


Honey Whole Wheat Bread

2 1/2 tsp. active dry yeast
1/2 c. lukewarm water
1 c. lukewarm milk
1/2 c. orange juice
5 TBSP melted butter
1 1/2 tsp. salt
3 TBSP sugar 
3/4 c. instant mashed potato flakes
3 3/4 c. Whole Wheat Flour

Activate yeast by mixing it with the water and a pinch of sugar, cover, and leave for 15 minutes. Mix the yeast with all other ingredients, lastly adding the flour a cup at a time. Knead for 10 minutes. Place in a lightly oiled bowl. Cover and place in a warm place for 90 minutes. Form in a greased loaf pan, cover with plastic wrap and let rise another 75 minutes. Bake at 350 degrees for 10 minutes. Cover loosely with aluminum foil and back for another 35-40 minutes. Drizzle honey over bread. Let cool completely before wrapping.

Super Muffins


Healthy muffins make a good breakfast, because anything in the form of a muffin taste better!




Mix white flour, whole wheat flour, oatmeal, baking soda, baking powder, and salt.




Mash up the bananas. Use overly ripe ones to make the muffins sweeter. If you want to speed up the ripening process moistening your bananas with a little water and microwaving them for a little helps.




Oh ya, add some pumpkin pie spice (no sugar) or/and some cinnamon to the dry mixture.




One lonely egg.




Beat the egg and add the applesauce.




Then mix the bananas and the egg mixture with the dry ingredients until moistened.




Place in greased muffin pan and preheat oven to 350 degrees. Bake for around 10-12 minutes or until toothpick comes out clean.




They look pretty good for no butter/ no sugar muffins.




Spread some jelly or whatever sounds tastiest to you on these and enjoy a healthy breakfast.

Banana-Apple-Oatmeal Muffins

1/2 c. white flour
1/2 c. whole wheat flour
1/2 c. oatmeal
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 teaspoon salt
1 teaspoon pumpkin spice
1 teaspoon cinnamon
2-3 bananas
1 egg
1/2 c. unsweetened applesauce

Mix dry ingredients. Beast egg and applesauce. Mash bananas. Mix egg mixture and banana mixture with the dry ingredients until moistened. Don't over-mix. Bake at 350 for around 10-12 minutes.
